We thought the booths were great this year, although we opted out of PFTS because of some of the changes.
I also realize there is now a charge for the wine tastings, which doesn't sit well with many. I didn't see a plethora of wines for sale this year in the auditorium, but maybe I just missed it.
We never do the behind the scenes dinners.

Can you be specific about what you didn't like?

We're annual pass holders. Our favorite Disney event for the past few years, and the reason we continue to renew our passes has been the Food and Wine Festival. And our favorite attractions at the Food and Wine have been the Wine Seminars and the Culinary Demos.

This year there were far fewer of each than in the past. And for the first time (as far as I know), there was a charge to participate. Previously, the average number of wine tastes offered in one wine seminar was 4 one-oz tastes. This year, each seminar offered only 3 less-than-one-oz tastes, while charging between $5 and $8 to attend. The $5 tickets could only be purchased online ahead of time by passholders, DVC members and maybe other special groups. But those tickets were so limited that every wine seminar and food demo I saw had empty seats.

While the Authentic Taste Seminars are still free of extra charges, they are offered only on the weekends and so limited that many people are turned away.

The only other non-extra-cost events we enjoyed that were associated with the Food and Wine Festival were the "Taste of Puglia" and the "History of Beer in America".

I found it disappointing that after paying for park admission, the Food and Wine Festival offered little that was included.

Those sound like some pretty valid gripes.
Personally I wasn't happy about the upper tier for PFTS. That has been one of our favorites, and I thought it was slimy to charge an extra $75 to get "better" wine & cheese... and a guaranteed table.
As you know, this event is expensive to begin with ($150 ish pp), and another $75 pp is just wrong IMO.

We tried the Party for the Senses one year, and I agree - it was very expensive for what we got. Especially when we got front row seats for an Eat to the Beat show we weren't interested in. David Sanborn, as I recall.
 
Yes it's expensive but it's still fun. I look at it that if I go to a very nice restaurant I would spend as much and if I were to travel to where all these tastes were available in the same area then it would be much more than my park admission and the extras. It's only once a year and I think I'm worth it so I continue to go. Just my opinion but since I spend about 10 hours there I figure that if I spend $150 total for admission and all my goodies I have essentially paid $15 an hour to have a good time. I think if you look at it that way then you don't mind paying the money. Afterall you can't take it with you when you die so enjoy life. You're worth it. :)
 
We justified our PFTS night because they had the Cirque de Soleil acts center stage while we were walking around eating and drinking in that big building between UK and Canada. We were happy we went, but we don't do it every year because of the cost. We go to the F&W festival, just not the PFTS.
 
We already drop about a hundred bucks just walking around the kiosks for a day.
