Hi,
I am deciding whether to convert my 2015 weeks to starpoints, or deposit with Interval. I know to convert to starpoints isn't the best value, but when I search on Interval I hardly see anything available. If I deposited a week, would I see more units? How far out is the best time to search? I'm looking to find something for 2016, not 2015.

The best exchanges never appear online - they are snagged with On-going Requests, behind the scenes. What you see online is just the leftovers.

That being said, you are unlikely to get an exchange for high season/school holidays.

The best practice is to put in an OGS, as early as possible, with a wide range of dates - now for 2016.
