Charging to room vs. Hilton Amex

When i stay at hotel, i usually charge any meals, drinks, activities etc back to my room, so dollars go on the folio. That is usually more valuable from a hhonors points earning perspective.

Is there any advantage to doing similar when staying at a HGVC using club points? I will ultimately be paying using my Hilton Amex. If I charge dinner to my Hilton Amex, will they count that a hotel charge for the higher points?

Yes. They will code it as a Hilton transaction and you will earn points at the Hilton bonus point level. I did that on my last trip to HHV.

Also when at Hilton Hawaiian Village you can shop at the stores there and charge back to your room. Then pay your Hilton or HGVC room charges with your Hilton AmEx and get greater points applied for your purchase.

However, not all shops let you charge back to your room. The Hawaiian Coffee Shop and a shirt shop in the Rainbow Bazaar wouldn't let us charge back to the room. They also don't give you discounts using the "valued gold discount card".
The shirt shop said you needed to spend at least $100 and the coffee shop said no way. Where they let you it is great to charge back to your room and use your Hilton Honors AMEX and get 7 points/dollar.
