I just cooked a corned beef Saturday in the crockpot. My sons gave my MIL a crockpot for Christmas. We visited her on Saturday and found the crockpot and all her other Christmas gifts in the trunk of her car. So, we got the crockpot out to see if we could get her to use it. I just covered the flat brisket with water and the season packet that came with it cooking it on high for about 5 hours and low about 4 hours. After that, since the crockpot was too small I dumped the water and brisket into a larger pot and added carrots, potatoes, and cabbage during the last hour. It came out just fine. We prefer the round briskets to the flat brisket, but that's all I saw in the store. I hope this helps. Honestly, however, the corned beef and cabbage doesn't taste any different that if you do the whole thing in a large pot on the stove. The crockpot really doesn't enhance the flavor.
