I have purchased two tickets using miles on AA in coach (these are all miles I had at the time) to Europe. I wanted to know if anyone knew of a way/loophole I could to upgrade to Business Class without giving the airlines my arm and leg.

You would have to redeposit your miles and repurchase at the business class rate. Sometimes, the Aadvantage Desk will allow you to do this without penalty. It also depends on the availability of the award for the class of service. Business Class seats for miles rarely become available for International travel.

At checkin
You may be given the option to "upgrade" for a fee. This happened to us last month on AA to Steamboat Springs enroute via Dallas for $90@ and returning, we were offered to upgrade on our United leg from Chicago to Cleveland for "only" $150@!
This opportunity might even be available when you checkin online, although we didn't see it then. Otherwise, getting to the airport early might help if there are seats in the upper class sections.

Do you have enough miles now including the ones you used for the tickets to get business class seats? If so, try a dummy reservation as if you were using miles for business class to see if there are seats available. If there are, call AA and see if they will let you redeposit the miles used and rebook the tickets in business. Even if they charge $150/ticket to do that, I think it's worth it.
