Does anyone have any recommendations? Especially looking for authentic Mexican but would welcome any suggestions.

In Celebration, just South of Disney...
Maybe not "authentic," but fresh and good -- Avocado Mexican Grill.

But I'd choose Columbia Restaurant... authentic Spanish, nearby.

East of Disney, on SR 535 (Apopka-Vineland Rd)...
Bahama Breeze is a Caribbean flavor chain. https://www.bahamabreeze.com
Chevy's, up the street, for "fresh" Tex-Mex. See: https://chevys.com/
El Patron, further on, has "artisan-handcrafted" food...
"Modern meets traditional." https://www.elpatronorlando.com/menu

Orlando has a pretty good restaurant scene outside the parks. I usually preface our trips with a scan through the Orlando Sentinel food section via their website. We have found some good locations based on the current reviews there. One thing about Orlando though is that many restaurants start off strong, and then fall off rapidly for service and quality; that's why I like seeing current reviews. Past history seems to be no indication of future performance.

We like Chuy's for Mexican in Orlando. Not to be confused with Chevy's.

It would be hard to find true authentic Mexican food relatively close to the parks. Most will be Tex Mex. I know there are several places listed on Restaurant.com.

I will second that. If you get there before 7pm, it is happy hour. You can get up from your table and help yourself to the Cadillac nacho bar. Plus cheap drinks. My daughter loved the stacked enchiladas so much that she has not stopped talking about them since our trip in August.

It’s our favorite Mexican Resturant. Is in Saint Cloud, Florida on 192. Called Jalapeños, best Margaritas and food is cooked to order. A bit of a drive but worth it.

Enchanted Isle resort.
I like Chevy's right on 535 just outside of Disney Springs.

And if you like Chinese my favorite is Citrus Gardens across
the street from the HGVC Tuscany in the Publix plaza.
