I realize this is too late for the original writer, but for future visitors to Kauai.....great suggestions above, but when you go to Waimea Canyon, save your stops at look-outs when you get to the canyon and follow the signs for Kalalau lookout. It overlooks Kalalau Valley and is incredibly beautiful! I suggest going there first (before enjoying the canyon views) because the clouds often move in at the Kalalau Lookout, completely obscuring the view. Sometimes the clouds lift quite quickly, so relax there for a bit, and that may happen.
If there are any quilters reading this, don't miss Kapaia Stitchery.....a lovely shop with local hand-crafted souveniers as well as beautiful fabric....one of my favorite quilt shops in the country! It is just outside Lihue; take the main road heading toward Princeville; just past Walmart and Wilcox Hospital there is a hill; the shop is at the foot of the hill on the left.

Kalalau is indeed a spectacular view. See attached photo.
